When I need a dinner that feels special but asks almost nothing from me during the workday, this 3-Ingredient Slow Cooker Balsamic Pork Shoulder is one of my favorite answers. Thick-sliced pork shoulder turns unbelievably tender in the slow cooker, and the balsamic-based cooking liquid reduces into a rich, glossy sauce that tastes like you spent hours fussing over it. It’s the kind of simple, practical recipe that works for busy weeknights, meal prep, or a low-effort weekend dinner when you want big flavor from just a few ingredients.

This pork is especially good served over mashed potatoes, creamy polenta, buttered noodles, or rice to catch every bit of the sauce. For something lighter, pair it with roasted green beans, a crisp salad, or simple steamed broccoli. I also love serving it with crusty bread on the side, because the extra balsamic sauce is too good to leave behind.

Ingredients

2 1/2 to 3 pounds thick-sliced pork shoulder

1 cup balsamic vinegar
1 cup brown sugar

Directions

1. Lightly coat the inside of your slow cooker if needed for easy cleanup. Place the thick-sliced pork shoulder in the slow cooker and pour the balsamic vinegar over the meat. Sprinkle the brown sugar evenly on top.

2. Cover and cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the pork is very tender and easily pulls apart with a fork.

3. Carefully transfer the pork to a cutting board or platter. If you want a thicker sauce, pour the cooking liquid into a saucepan and simmer it on the stove for 8 to 12 minutes until reduced and glossy.

4. Slice or shred the pork, then spoon the sauce over the top and serve warm.

Variations & Tips

Add garlic: If you want to keep the spirit of the recipe simple but add one more layer of flavor, tuck in 3 to 4 smashed garlic cloves before cooking. They mellow into the sauce and make it taste even richer.

Make it meal-prep friendly: This pork reheats beautifully. Store sliced or shredded pork with some of the sauce so it stays moist, then warm it gently for lunches, grain bowls, sandwiches, or easy leftover dinners during the week.

Balance the sauce: Balsamic vinegar and brown sugar create a sweet-tangy finish, but different brands can vary. If your sauce tastes sharper than you like after cooking, let it reduce a little longer. If it tastes too sweet, a small splash of water can mellow it out.

Use the right cut: Thick-sliced pork shoulder is ideal here because it has enough fat and connective tissue to become fork-tender in the slow cooker. Leaner cuts like pork loin will cook faster but won’t give you the same juicy texture.

Serve it different ways: You can slice the pork for a dinner plate presentation or shred it completely for sandwiches, sliders, or rice bowls. If I know we’re using leftovers in multiple ways, I usually shred half and leave half in slices.
