French Fry Breakfast Casserole

Ingredients
4 cups cooked French fries, lightly seasoned
1 cup cooked and crumbled sausage or bacon
1 small onion, diced
1 bell pepper, diced
1 cup shredded cheddar cheese
6 large eggs
1/2 cup milk
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon paprika
Directions
1. Preheat your oven to 350°F (175°C).
2. In a large skillet, sauté the onion and bell pepper until they become soft and translucent.
3. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, and paprika.
4. Lightly grease a 9x13 inch baking dish. Spread the cooked French fries evenly at the bottom.
5. Sprinkle the sautéed onion and bell pepper over the fries. Add the cooked sausage or bacon.
6. Pour the egg mixture over everything in the baking dish and make sure it seeps in between the layers.
7. Sprinkle the shredded cheese evenly on top.
8. Bake in the preheated oven for about 25-30 minutes or until the eggs are set and the cheese is bubbly and golden brown.
9. Let it cool slightly before serving.
