Ingredients
1 pound ground beef
1 small onion, diced
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 can (15 ounces) red enchilada sauce
2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
12 corn tortillas
1/4 cup sliced black olives (optional)
1/4 cup chopped fresh cilantro (optional)
Directions
Preheat your oven to 375°F (190°C).
In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onion is softened, about 5-7 minutes. Drain any excess fat.
Stir in the cumin, chili powder, salt, and pepper. Add the enchilada sauce and bring to a simmer. Remove from heat.
